Savour Restaurant, located at 15301 McGregor Blvd. in Fort Myers, has officially opened its doors under the direction of chef and owner Matt Geiger. Geiger acquired the former Azure restaurant on March 6 and rebranded it as Savour to reflect his vision of an upscale dining experience that blends global cuisine with a French foundation.

Geiger has a background working at notable restaurants and has shifted the menu from a primarily French focus to a diverse, chef-driven approach. The restaurant remains the same size and setting as before, preserving its original charm while gradually introducing new menu items and branding changes based on customer feedback.

"I'm still trying to keep the French foundation," he said, "but I've done a lot of stuff, have a lot of experience. I don't want to be a generic French restaurant. I want it to be an upscale restaurant with global cuisine and a French foundation. The fundamentals are there, but I want it to be me."

The new menu highlights small plates designed for sharing, with innovative offerings like white wine braised chicken with colorful vegetables and a vibrant beet salad, alongside French classics such as coq au vin and French onion soup. "The new menu focuses on small plates," Geiger said. "Order three or four things, share them with the table."

Savour emphasizes a relaxed and unhurried dining experience, focusing on quality and presentation. "I care about what I'm doing," Geiger said. "We don't rush plates out. We're not looking for a bunch of table turns. We're happy with one table turn."

"Relax and enjoy your time here," said Geiger, who makes it a point to visit each table when he's not too busy. "This isn't fast food. You don't come in and out in an hour. You can see what we're doing here, what goes on (in the open kitchen). This is real food, cooked with care."

Savour is open Wednesday through Saturday from 5 to 9 p.m. Reservations are recommended for those seeking a unique dining experience that balances French tradition with global flavors.
