Acqua Bistecca Brings Chef Michael Mina’s Signature Cuisine to Estero Bay

London Bay Development Group and The MINA Group announce Acqua Bistecca, a new Italian-inspired waterfront restaurant debuting in February 2026 at Saltleaf Marina in Estero Bay, Florida. Open to the public, reservations will begin in early November.

Led by Chef Michael Mina, a James Beard Award winner and founder of The MINA Group—operator of more than 30 acclaimed restaurants worldwide—Acqua Bistecca marks the group’s first venture in Southwest Florida. The restaurant will introduce a true bayfront dining experience to Saltleaf on Estero Bay, the region’s most anticipated master-planned coastal community.

“This concept is about bringing people together to celebrate tradition, creativity, and connection over great food,” said Mina. “Saltleaf’s setting perfectly embodies that vision.”

Blending wood-fired meats and fresh Gulf seafood, the menu lives up to its name—“water and steak.” Highlights include charred steak brushed with red Lambrusco butter, saffron risotto with osso buco, and a raw bar with Florida stone crab claws and oysters with negroni mignonette. With a lively yet refined atmosphere, Acqua Bistecca will offer a gathering place for indulgent flavors, inspired cocktails, and unforgettable occasions.

Designed by Meyer Davis Studio, the 7,500-square-foot space will feature light woods, woven textures, and sculptural lighting to reflect the easy elegance of the bay. Seating 184 guests across indoor and outdoor terraces, it includes a marble bar, lush greenery, and a private chef’s room for intimate events.

Located at 5500 Coconut Road, Bonita Springs, Acqua Bistecca anchors the waterfront within Saltleaf on Estero Bay, home to The Ritz-Carlton Residences, Estero Bay and the Saltleaf Golf Preserve.
